Our daughter has a few chickens so I am going to start preserving some eggs. Your explanations are very clear and complete. I do also wonder how the cardboard cartons hold up with the oil rub method. I guess you don’t leave a lot of oil on the egg shell?

Yes, hydrate lime is just another term for pickling lime. The common names for hydrate lime are: slaked lime, calcium hydroxide [CA(OH)2], caustic lime, slack lime, and pickling lime.

You use egg cartons for the oil rub method and earthenware for the soak method.
